This is an hybrid of Buffet and 3- course Banquets- It offers varieties of meals to guests while they are seated. It can simply be explained as set up Buffet on each table rather than on Buffet stations. In this service, meals are portioned into bowls in varieties, and are presented to the guests on their seats to help themselves .
Each bowl of food is replicated on all tables to allow guests to feast and express themselves as they are passed round from one guests to the other manually using their hands.
